Corporate Executive Chef Manuel Trevino Talks With The Hype About Working With by CHLOE.

As ESquared Hospitality’s first quick service restaurant, by CHLOE. is renowned for its chef-driven vegan menu. Co-founder Samantha Wasser has opened up 8 locations — by CHLOE. is now in New York City, Los Angeles, Boston, Providence and London — in less than 4 years of existence. The growing restaurant concept not only offers a creative, seasonally-aware and vegan-centric menu, but is also sustainable as a company, utilizing mindful ingredient sourcing and eco-friendly packaging.

How did you wind up working with by CHLOE.?

Chef Manuel Trevino: I have been involved with the concept since the beginning in 2015, I am so happy and grateful to be part of such an amazing team.

How much of your time is spent in the kitchen?

Chef Manuel Trevino: I spend mostly every day in one of the by CHLOE. kitchens, rotating my time throughout our different New York City locations most frequently, while making time for visits to our other states throughout the year. When we are opening a new location I stick there for a while to make sure the kitchen team is ready to rock.

Do you have a favorite menu on the by CHLOE. menu?

Chef Manuel Trevino: I always get excited when I’m developing our new Market Specials. They change with the seasons so it’s always nice to have a new dish to look forward to. Right now I’m obsessed with our new Tropic Thunder Smoothie — it has turmeric, banana, mango, pineapple, hemp seeds, black pepper and coconut milk in it. It’s our tropical take on a Golden Milk.

When not busy with by CHLOE., how do you like to spend your free time?

Chef Manuel Trevino: I love to cook at home and spend time with my kids.

What was the last concert you went to for fun?

Chef Manuel Trevino: I saw Quicksand at the Warsaw in Greenpoint.

Finally, Chef Manuel, any last words for the kids?

Chef Manuel Trevino: Eat your vegetables! The best and easiest place to start is to make vegetables the center of your plate and look for foods you normally consume that are already vegan by default. It will feel like much less than an overhaul when you realize how much you already consume that happens to be vegan.
