– In a small sauce pot over medium-high heat, make a simple syrup by combining water, ¾ cup sugar and ginger.
– Bring to a boil, stirring until sugar is dissolved.
– Remove from heat and let cool.
– In a food processor, add blueberries and lime juice.
– Puree until smooth, then press mixture through a fine mesh sieve to discard solids.
– In a bowl with a pour spout, add cooled simple syrup and blueberry mixture and stir to combine.
– Fill 2 glasses with ice.
– Divide mixture evenly into glasses.
– Top off with seltzer.
To reduce the sugar content per serving, you can use less of the simple syrup. Reducing the sugar in the simple syrup alters the consistency of the simple syrup.

The company was founded with the introduction of St-Germain, an artisanal French liqueur made from fresh elderflower blossoms, heralded as one of the most influential cocktail components of the last decade by the New York Times. Pronounced “teh-pah-chey,” this beverage has been made in Mexico for decades and thousands of versions of tepahe are known to have existed. De La Calle’s offering uses certified organic pineapples and it is delicious. De La Calle’s chief fermenter Rafael Martin Del Campo is a third-generation tepache maker, and he had reportedly studied over 50 versions of tepache to help helm De La Calle’s wares.
